Potato Donuts - cooking recipe
Ingredients

3 eggs
3/4 c. sugar
3 Tbsp. shortening
2 3/4 c. flour
4 tsp. baking powder
1 tsp. salt
1 c. leftover mashed potatoes
oil for deep-fat frying
Preparation

In a large mixing bowl, beat eggs, sugar and shortening. Combine dry ingredients; gradually add to egg mixture alternately with potatoes (dough should be smooth).
Chill at least 2 hours or overnight.
