Strawberry Preserves Deluxe - cooking recipe

Ingredients
    1 1/2 qt. stemmed, firm, red-ripe strawberries
    5 c. sugar
    1/3 c. lemon juice
Preparation
    Berries with hollow cores should not be used. Combine strawberries and sugar; let stand 3 to 4 hours. Bring slowly to boiling, stirring occasionally until sugar dissolves. Add lemon juice. Cook rapidly until berries are clear and syrup thick, about 10 to 12 minutes. Pour into a shallow pan. Let stand, uncovered, 12 to 24 hours in a cool place. Shake pan occasionally to distribute berries through syrup. Pack into hot Ball jars, leaving 1/4-inch headspace. Adjust caps. Process half pints and pints 20 minutes at 180\u00b0 to 185\u00b0 in hot water bath. Yield: About 4 half pints.
