Smoked Turkey And Rice Casserole - cooking recipe

12 slices bacon
1 Tbsp. salt
1 1/2 qt. milk
1 qt. diced turkey
6 c. cooked rice
1/2 c. flour
1/2 tsp. pepper
2 pkg. smoked flavored cheese (each 6 oz.), cubed
1/4 c. pimento
paprika
Preparation

Cook bacon until crispy, reserving drippings.
Blend flour, salt and pepper into 1/2 cup bacon drippings.
Add milk, slowly, stirring until thick and smooth.
Add 2/3 of cubed cheese; stir until somewhat melted.
Fold in turkey, pimento, rice and crumbled bacon.
Pour into two buttered 1 1/2-quart casseroles or three 1-quart casseroles.
Top with remaining cheese and sprinkle with paprika.
Bake at 350\u00b0 for 20 to 30 minutes until bubbly.
(Wrap and freeze one.)
This is great for after the holidays using your leftover turkey.
