Makin Sausage - cooking recipe

Ingredients
    2 lb. ground pork
    1 tsp. black pepper
    1 tsp. red pepper
    2 Tbsp. backbone fat
    1/2 tsp. salt
    2 Tbsp. sage
Preparation
    After grinding meat, mix other ingredients in, using a wooden spoon.
    It's best to sprinkle a little at a time, and continue stirring.
    Work down into patties by pinching off a small amount and rolling it around in the palm of your hand.
    Flatten by pressing the 2 hands together.
    Have hands wet with water for better results.
