Ingredients

2 or 3 c leftover mashed potatoes
1/4 c onion
2 Tbsp butter
1 egg-beaten
approximately 1/4 c flour to thicken
Preparation

Saute onion in butter until tender, add to mashed potatoes. Add beaten egg and blend well.
Add flour until good consistency for pancakes. Heat skillet until hot. Place flour in saucer and add potato mixture to coat.
Fry until golden brown, turning once.
