Picante Corn Muffins - cooking recipe

Ingredients
    1 c. all-purpose flour
    3/4 c. yellow cornmeal
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. buttermilk
    2 eggs or egg substitute
    6 Tbsp. picante sauce
    1/4 c. butter or margarine, melted and cooled (applesauce can be used if you don't want the fat, same amount)
Preparation
    Combine flour, cornmeal, baking powder, baking soda and salt in a large bowl.
    Add buttermilk, eggs or egg substitute, picante sauce and butter last.
    Stir just until ingredients are blended. Fill 12 well-greased muffin cups almost full.
    Bake at 425\u00b0 for 15 to 20 minutes or until wooden pick inserted in center comes out clean.
