Armadillo Eggs - cooking recipe
Ingredients

12 jalapeno peppers
1 lb. Jimmy Dean hot sausage
1 box original Shake 'n Bake
enough sharp Cheddar cheese to choke a small goat (1 c.)
Preparation

Wash jalapeno peppers and cut the ends off of the peppers. Take the seeds out of the peppers and stuff the cheese inside the peppers.
Take peppers and roll sausage around the peppers to make a small ball.
Roll the small ball in the Shake 'n Bake to cover. Bake at 375\u00b0 until the sausage is done.
Make sure that you spray the cookie sheet with Pam before you place balls on it so you can cut down on the fat.
