Tropical Chicken Salad - cooking recipe

6 c. shredded fresh spinach
3 c. cooked chicken breasts, chopped
18 oz. can crushed pineapple, drained
1/2 c. canned mandarin oranges, drained
1/2 c. green grapes
1/2 c. sliced water chestnuts
1/4 c. low-fat cottage cheese
2 Tbsp. reduced calorie mayo
1 Tbsp. chopped fresh chives
1 Tbsp. slivered almonds
2 tsp. sugar
1/2 tsp. grated orange rind
1/4 tsp. grated lime rind
1/8 tsp. ground ginger
2 tsp. lemon juice
Preparation

Combine cottage cheese, pineapple, mayo, sugar, orange and lime rind, ginger and lemon juice in food processor until smooth.
