Spaghetti With Clam Sauce - cooking recipe
Ingredients

1/2 c. olive oil
1 large onion, sliced fine
1/2 c. fresh parsley
2 stalks tender celery, chopped fine
1 large clove garlic, minced
2 (8 oz.) cans minced clams
1 lb. spaghetti
pinch of paprika
salt to season
Preparation

Saute onion, garlic, celery and small amount of parsley in olive oil.
Add liquid from minced clams and salt.
Simmer slowly until onion is well cooked and about half of liquid has evaporated (5 to 10 minutes).
Add clams and remaining parsley.
Simmer, covered, about 5 minutes.
Cook spaghetti and serve with clam sauce.
Sprinkle with Parmesan cheese.
Serves 4.
