Chicken Bologna - cooking recipe

Ingredients
    25 lb. chicken
    1 lb. Tender Quick
    1 oz. black pepper
    1/2 c. sugar
    2 tsp. saltpetre
    2 tsp. garlic powder
    1 Tbsp. liquid smoke
Preparation
    Cut the meat from the bones.
    Add Tender Quick.
    Grind twice; let set 24 hours.
    Add remaining ingredients.
    Mix well and grind again, then process as any fresh meat (such as stuffed sausage) or stuff into cloth bags and boil in water 30 minutes.
    Let cool, then slice and freeze.
