Shepherd'S Pie - cooking recipe

Ingredients
    1 lb of lean ground beef or ground turkey
    1 small onion, chopped
    1 cup or small can of mixed vegetables (leftovers will do)
    or you can add chopped vegetables of your choice . . . celery, pepper, carrots, etc.
    2 Tbsp. flour or cornstarch
    2 cups of mashed potatoes, fresh or instant
    salt and pepper to taste
Preparation
    Brown meat in iron skillet.
    Before meat is done add onion and other vegetables.
    Continue cooking for a few minutes, adding salt and pepper to taste.
    Little bits of leftover tomato add color and flavor.
    In a cup or small bowl make a roux with the flour and a small amount of water.
    Add to meat mixture and continue cooking until a small amount of gravy thickens in the mixture.
    Spoon mashed potatoes over the top and place skillet in 375\u00b0 F. oven for 20 - 25 minutes or until mashed potatoes are beginning to brown on top.
    Serve with a big spoon and let everyone help themselves. Great with buttered rolls and maybe a small salad.
