Cream Of Broccoli Soup - cooking recipe
Ingredients

1/2 c. butter
1/2 c. onion, finely diced
1/2 c. celery, finely diced
1/2 c. carrots, finely diced
1/4 c. flour
1 1/2 Tbsp. cornstarch
2 Tbsp. parsley, chopped
1 qt. chicken stock (can use bouillon cubes)
1 qt. milk
1/8 tsp. soda
1 c. processed Cheddar cheese, grated (Velveeta)
salt and pepper
Preparation

Melt butter in bottom of soup pot.
Add onion, carrots and celery; saute over low heat until soft. Add flour and cornstarch, cooking until bubbly.
Add stock with milk and make a smooth sauce.
Next add the soda and cheese.
Cook until cheese is melted, adding salt and pepper to taste.
Add parsley a few minutes before serving.
