Ingredients

2 pt. fresh strawberries, washed and stemmed
1/2 c. water
1 c. sugar
3 Tbsp. cornstarch
1 Tbsp. butter
1 drop red food coloring
1 baked pie shell
1/2 pt. heavy cream, whipped with 1 Tbsp. sugar
Preparation

Put aside 8 small whole berries for garnish.
Take a handful of berries and squeeze enough into a small saucepan to make 1/2 cup. Leave the rest of berries whole or halved.
Combine sugar, cornstarch, and water with crushed berries.
Bring to boil over medium heat and cook while stirring over low heat for 3 minutes, or until clear and thickened.
Add a drop of red food coloring and butter.
Stir and let cool.
Place berries into cooked pie shell and cover with cooled sauce.
Top with real whipped cream and garnish with a few small whole berries.
Refrigerate until ready to serve.
