Italian Wedding Soup - cooking recipe

Ingredients
    20 c. water
    4 skinless chicken breasts
    5 peeled carrots
    5 celery stalks
    10 chicken bouillon cubes
    1 onion, peeled
    approximately 10 oz. noodles
    1 head escarole, chopped
    black pepper (few dashes)
Preparation
    While boiling, add:
    2 eggs or Egg Beaters, beaten with a whip and combined with 2 tablespoons of Parmesan cheese.
    Drop into boiling soup, 1 teaspoon at a time.
    Add meatballs and simmer.
