African Stir-Fry - cooking recipe

Ingredients
    2 pkg. beef and/or chicken stir-fry
    1/2 c. sliced onions
    1 c. bean sprouts or cucumber chunks
    1/2 large can pineapple chunks
    1 small can mandarin orange segments
    2 to 3 c. rice
    1/2 c. chopped cashews
    1 small tomato (chunks)
    chopped green chives
    soy sauce
    cooking oil or 2 Tbsp. butter
Preparation
    Stir-fry meat slices and onions in oil or butter.
    Add beans sprouts or cucumber chunks.
    Add pineapple chunks and mandarin orange segments.
    Set aside, covered.
    Cook rice according to directions on package.
    Pour stir-fry over cooked rice.
    Sprinkle with chopped cashews, small tomato chunks and chopped green chives.
    Serve with soy sauce.
    Makes 4 servings.
