Ingredients

2 eggs
2/3 c. sugar
3/4 c. flour
1/2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
5 Tbsp. margarine
1 1/4 c. evaporated milk
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1 c. persimmon pulp
Preparation

Sift together flour, baking powder soda and salt.
Set aside. In large mixing bowl, beat eggs and sugar.
Add flour mixture. Gradually beat in milk and spices.
Add persimmon pulp last.
Bake at 325\u00b0 for 1 hour in glass baking dish.
Let cool briefly and serve warm, topping with Cool Whip.
