Chicken In Red Wine - cooking recipe

Ingredients
    1 chicken, cut into serving pieces
    salt and pepper to taste
    1/2 c. soft butter or margarine
    1/2 tsp. tarragon
    1/4 tsp. basil
    1 Tbsp. chopped parsley
    1 Tbsp. finely chopped shallots or scallions
    dry red wine
Preparation
    Preheat oven to 400\u00b0.
    Place chicken in a shallow baking dish. Season with salt and pepper.
    Mix together butter, tarragon, basil, parsley and shallots and smear over the top of the chicken pieces.
    Pour red wine down the side of dish until it extends halfway up the chicken.
    Bake, uncovered, for 40 minutes, until browned and done.
    Can be done ahead and refrigerated but add 15 to 20 minutes of cooking time, if cold.
