Diabetic Cake - cooking recipe

Ingredients
    2 c. raisins
    2 c. flour
    1/2 tsp. salt
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    3/4 c. oil
    1 c. unsweetened applesauce or fruit cocktail
    2 Tbsp. liquid sweetener (optional)
    1 tsp. vanilla
Preparation
    Cook raisins in 2 cups water.
    Drain and reserve liquid.
    Mix all ingredients well.
    Place in a 9 x 9-inch pan.
    Bake at 350\u00b0 until toothpick comes out clean when inserted in top, about 30 minutes.
    Yields 18 servings.
