Southern Candied Sweet Potatoes - cooking recipe

Ingredients
    3 medium sweet potatoes
    3/4 c. sugar
    1/2 c. firmly packed light brown sugar
    Nutmeg (optional)
    6 Tbsp. butter or margarine
    1 1/4 c. water
Preparation
    Peel and cut yams crosswise into 1/4 inch thick slices. Place in large skillet. Combine the sugar, brown sugar, and nutmeg (optional). Sprinkle over sweet potatoes. Dot with the butter and add the water. Bring to a boil and then reduce heat to low and cover pan.
    After about 20 minutes, check the potatoes to see if they are fork tender. If not, continue cooking for another 5 minutes. By this time, the liquid should start to form a syrup. Remove cover and continue cooking for another 10 minutes or until the syrup has thickened.
