Fish Newburg - cooking recipe

Ingredients
    7 Tbsp. butter, melted
    7 Tbsp. flour
    1 qt. milk
    1/2 lb. grated American cheese
    1/2 c. cooking sherry
    2 lb. white fish, cooked
Preparation
    Stir butter and flour to make a paste over low light.
    Add milk, stirring constantly.
    Boil until thick.
    Remove from stove. Add grated cheese, sherry and cooked fish.
    Return to stove, preferably over double boiler.
    Cook a few minutes and season with salt, pepper and paprika.
    Serve immediately.
