Summer Sausage - cooking recipe

Ingredients
    5 lb. lean ground beef
    2 Tbsp. Morton curing salt
    2 Tbsp. coarse black pepper
    2 Tbsp. hickory smoke salt
    2 Tbsp. whole mustard seed
    1 Tbsp. garlic powder
Preparation
    Mix all ingredients in large bowl and cover well.
    Place bowl in refrigerator for 3 to 4 days, but re-mix again once each day.
