Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1/4 c. Ritz crackers
    1/4 c. shredded Colby cheese
    2 eggs
    2 Tbsp. diced onion
    1 clove garlic
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Pare and cube eggplant.
    Cook for 5 minutes in boiling water. Drain and mash.
    Stir in Ritz crackers, cheese, beaten eggs, onion, garlic, salt and pepper.
    Shape into patties and fry until golden brown, about 3 minutes, on each side.
    Serves 4.
