Chicken Rice And Cheese - cooking recipe

Ingredients
    1 small onion
    1 Tbsp. oil
    3 c. water or chicken broth
    1 c. rice, uncooked
    1 1/2 c. cut up, cooked chicken
    1 c. cut up cheese (small pieces)
    salt and pepper to taste
Preparation
    Chop onion and cook in oil until tender.
    Add broth; heat until boiling.
    Add rice.
    Cook 20 minutes.
    Add chicken, cheese, salt and pepper.
    Cover and cook over low heat until cheese melts. Serves 6.
