Potato Stuffing (Side Dish)(Pennsylvania Dutch Recipe) - cooking recipe

Ingredients
    1 large onion, finely chopped
    2 to 3 celery ribs, finely chopped
    6 Tbsp. butter or margarine
    2 slices white bread, torn
    3 c. mashed potatoes
    2 Tbsp. minced, fresh parsley
Preparation
    In a large saucepan, saute the onion and celery in butter until tender.
    Remove from the heat.
    Add bread, potatoes and parsley; mix well.
    Spoon into a greased 1-quart casserole.
    Bake, uncovered, at 350\u00b0 for 45 minutes or until top is lightly browned. Yields 6 servings.
