Texas Corn Salad - cooking recipe

Ingredients
    4 c. canned corn
    1 avocado, diced
    1/4 c. scallions
    1/4 c. mayonnaise (low-fat)
    1 Tbsp. lemon juice
    1/2 tsp. chili powder
    1/2 tsp. cumin
    dash of nutmeg
    salt and pepper to taste
    6 c. salad greens
    4 hard-cooked eggs
Preparation
    Mix the first 3 ingredients together.
    Blend in the mayonnaise, lemon juice and spices; mix well and chill.
    Spoon into bowl lined with salad greens.
    Garnish with cooked eggs.
