Fat-Free Zucchini Bread * - cooking recipe
Ingredients

3 eggs
1 1/4 c. sugar
1 c. applesauce
2 c. flour
1 Tbsp. cinnamon
1 tsp. salt
1 Tbsp. vanilla
1 c. chopped nuts
2 c. zucchini, coarsely grated
2 tsp. baking soda
1/4 tsp. baking powder
Preparation

Sift together flour, baking soda, cinnamon, salt and baking powder and set aside.
Beat eggs until frothy; beat in sugar, applesauce and vanilla.
Stir in zucchini and flour mixture.
Fold in nuts.
Pour into 2 greased and floured loaf pans.
Bake at 350\u00b0 for 30 to 35 minutes or until cake tester comes out clean.
Let cool 10 minutes and invert on racks to continue cooling.
Freezes well.
