Mexican Cornbread - cooking recipe
Ingredients

1 small can cream-style or whole kernel corn
1 1/2 c. self-rising meal
1 c. buttermilk
1/2 c. oil
3 eggs
1/4 c. diced onion
1/2 c. diced green sweet pepper
1/2 tsp. jalapeno pepper
1 c. grated Cheddar cheese
Preparation

Mix ingredients (except cheese).
Pour half of mixture in greased pan.
Spread cheese over that and cover with remaining mixture.
Bake at 425\u00b0 for about 45 minutes.
