Spiced Roast Chicken(Gore Family Recipe) - cooking recipe

Ingredients
    1 (3 1/2 lb.) chicken
    1 Tbsp. margarine
    2/3 c. Marsala
    2 Tbsp. olive oil
    1 onion, finely chopped
    1 tsp. garam masala
    4 oz. button, brown or chestnut mushrooms, chopped
    1 c. coarsely grated parsnips
    1 c. coarsely grated carrots
    1/4 c. minced walnuts
    2 tsp. chopped fresh thyme
    1 c. fresh white bread crumbs
    1 egg, beaten
    salt and pepper to taste
Preparation
    Prepare stuffing:
    In a large saucepan, heat olive oil.
    Add onion and saute 2 minutes or until softened.
    Stir in garam masala and cook 1 minute.
    Add mushrooms, parsnips and carrots; cook, stirring 5 minutes.
    Remove from heat; stir in walnuts, thyme, bread crumbs, egg and salt and pepper.
    Stuff and truss chicken. Place breast down in a roasting pan; add 1/4 cup water.
    Roast 45 minutes; turn chicken breast up and dot with margarine.
    Roast about 45 minutes or until a meat thermometer inserted in thickest part of thigh (not touching bone) registers 185\u00b0 (85\u00b0C).
    Transfer to platter; keep warm.
