Pineapple Beet Cake - cooking recipe
Ingredients

2 1/2 c. plus 2 Tbsp. flour
1 1/4 c. cooking oil
3 eggs, slightly beaten
2 c. sugar
1 tsp. salt
2 tsp. soda
2 tsp. vanilla
2 tsp. cinnamon
1/2 c. coconut
1 c. chopped nut meats
1/2 c. crushed pineapple, drained
1 (16 oz.) can shoestring cut beets, undrained
Preparation

Blend ingredients in order given in large mixing bowl.
Bake in 9 x 13-inch pan at 350\u00b0 for 35 to 45 minutes.
Ice with Cream Cheese Frosting or dust with powdered sugar.
This cake (a family favorite) is moist and keeps well.
We have had guessing games about this cake and no one ever guessed beets.
