Garlic-Parsley Potatoes - cooking recipe
Ingredients

3 lb. medium red potatoes (unpeeled), sliced
1/4 c. olive oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. black pepper
2 Tbsp. chopped parsley, divided (can use parsley flakes)
Preparation

Combine potatoes, olive oil, garlic, salt and pepper in a large bowl; toss to coat well.
Place half of mixture in a lightly greased 12 x 8 x 2-inch dish.
Sprinkle half of parsley over potatoes.
Add remaining potato mixture.
Cover and bake in a preheated 350\u00b0 oven for 45 minutes, or until tender.
Uncover; sprinkle remaining parsley over potatoes.
