Gertrude White'S Fried Green Tomatoes - cooking recipe
Ingredients

6 to 8 pale green tomatoes
1 egg
1 Tbsp. cold water
fine bread crumbs
salt and pepper
1 Tbsp. parsley, chopped
Preparation

Cut tomatoes into slices about 1/2 inch thick.
Beat egg and water slightly.
Dip slices in egg and roll in bread crumbs which have been seasoned with salt and pepper.
Allow tomatoes to dry somewhat before frying or place in refrigerator for about 1/2 hour.
Place tomatoes in hot oil in heavy skillet.
Brown on one side and turn carefully.
Reduce heat so tomatoes will have sufficient time to cook before browning.
Garnish with chopped parsley and serve at once.
