Quick Chopped Herring Appetizer - cooking recipe

Ingredients
    1 (8 oz.) jar plain herring fillets, chopped
    1 large onion, chopped
    1 large apple, peeled and chopped
    1/2 green pepper, chopped
    1 or 2 slices white bread, diced
    3 hard-boiled eggs, chopped
    1/4 c. white vinegar
    1/4 c. sugar
Preparation
    Combine herring, juice from jar, white vinegar and sugar.
    Add onion, apple, green pepper, 1 slice bread and eggs.
    If mixture is too loose, add second slice bread.
    Serve as a canape on rye or pumpernickel party bread.
    Can be made one day in advance.
    Makes 2 pounds or 12 salad portions.
