Carolina Red Rice - cooking recipe

Ingredients
    2 c. rice, uncooked
    1/4 c. vegetable oil
    2 c. water
    4 slices bacon, fried crisp
    1/2 c. onion, minced
    1/2 c. celery, minced
    1/2 c. bell peppers, minced
    1 can tomatoes, mashed
Preparation
    Fry the bacon in a large pot or Dutch oven until crisp.
    Add oil and saute onion, celery and bell peppers until tender. To this, add the tomatoes with the liquid and 2 cups water. Cook at a rolling boil for 20 minutes. Add rice to the pot and stir well. When mixture returns to a boil, reduce heat to low. Cover and cook for 30 minutes or until rice is fluffy. Serves 6 to 8.
