Nellie (Ma) Summer'S Red Beans - cooking recipe

Ingredients
    6 lb. red beans
    3/4 to 1 c. brown sugar
    3 to 4 lb. salt pork, cut in cubes
    1 heaping tsp. ginger
    3 large onions
    2 qt. tomato juice
    salt to taste
Preparation
    Soak beans overnight.
    Cover good with water to cook.
    After beans begin to cook, add ginger.
    Cook for 1 hour before adding other ingredients.
    Add small amounts of water as necessary.
    Cook approximately 6 to 8 hours.
    Feeds about 100 people.
    Good for church dinners, etc.
