Java Tapioca Parfaits - cooking recipe

Ingredients
    1 egg yolk
    1/3 c. sugar
    2 tsp. instant coffee powder
    2 c. milk
    1 stiffly beaten egg white
    3 Tbsp. quick cooking tapioca
    dash of salt
    1/2 tsp. vanilla
    1/2 c. whipping cream, whipped
Preparation
    Combine first 6 ingredients.
    Bring to boiling, stirring constantly.
    Remove from heat.
    Add vanilla.
    Slowly pour mixture over egg white, mixing well.
    Cover; chill.
    Alternate layers of tapioca and whipped cream in 4 or 5 parfait glasses.
