Fried Eggplant - cooking recipe
Ingredients

1 medium eggplant
1 c. flour
1 egg
1 c. bread crumbs
cooking oil or olive oil
salt and pepper
Preparation

Pare and cut in 1/4 inch slices (peeled eggplant).
Beat egg slightly.
Add salt and pepper to flour.
Batter eggplant in flour, dip in egg, then bread crumbs.
Fry until brown.
