Pineapple Nut Bread - cooking recipe
Ingredients

2 c. flour
2/3 c. sugar
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. chopped pecans
1 beaten egg
1 tsp. vanilla
2 Tbsp. oil
1 small can crushed pineapple (undrained)
1 tsp. baking soda
Preparation

Mix together the flour, sugar, baking powder and salt.
Add pecans.
In small bowl, mix egg, vanilla and oil.
Add to dry ingredients.
In small bowl, add baking soda to pineapple; stir. (This will foam up making the liquid needed.)
Blend into other ingredients and stir just to blend.
Pour batter into an 8 x 4-inch loaf pan that has been sprayed with oil (or use shortening and flour method).
Bake at 300\u00b0 for 1 hour or until done in center.
Serve warm or cold.
Good with cream cheese spread. Serves 10.
