Sausage Bean Burritos - cooking recipe

Ingredients
    3-4 lbs. Pork Sausage
    1/2 c. Green Pepper, chopped
    1/3 c. Onion, chopped
    1 15 oz. can Black Beans, rinsed and drained
    1 1/2 c. Long Grain Rice, cooked
    1 1/2 c. Salsa, divided
    10 Flour Tortillas (7 in. size)
    1 c. Cheddar Cheese, shredded, divided
Preparation
    In a large saucepan, cook sausage, green pepper and onion over medium heat until meat is no longer pink.
    Drain.
    Stir in beans, rice and 1 cup of salsa.
    Mix well.
    Spread about 1/2 cup of sausage mixture down the center of each tortilla.
    Sprinkle with 1 T. cheese.
    Roll up and place, seam side down, in a greased 13 x 9 x 2 in. baking dish.
    Top with remaining salsa, cover and bake at 350 degrees for 30 min.
    Uncover; sprinkle with remaining cheese.
    Bake 5-10 min. longer or until cheese is melted.
    Yield: 10 Burritos.
