Country Farm Potatoes - cooking recipe
Ingredients

6 Idaho potatoes
1 1/4 c. finely chopped onions
1 1/4 c. finely chopped green pepper
1/2 c. milk
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. grated Cheddar cheese (6 oz.)
Preparation

Bake potatoes.
Cut off some of top; scoop out potato.
Mash in bowl.
In hot oil, saute 1/4 cup onion and 1 1/4 cups green pepper.
Heat the milk and add the sauteed vegetables to this with the salt and black pepper and add 1/2 of the grated Cheddar cheese.
Mix all with mashed potatoes.
Fill shells and sprinkle the other half cup of shredded cheese on top.
Sprinkle paprika on top.
(Can be prepared ahead of time for use.)
Reheat filled potato shells 15 minutes at 350\u00b0.
