Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. flour
    2 c. grated zucchini (unpeeled)
    2 tsp. vanilla
    1/4 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 c. chopped nuts
Preparation
    Beat eggs until fluffy; add oil, sugar, zucchini and vanilla; mix.
    Add dry ingredients and mix.
    Stir in nuts.
    Bake at 350\u00b0 for about 1 hour.
    Makes 2 large loaves or 1 tube pan.
    Tastes better if allowed to stand overnight before slicing.
    Can freeze too.
