Lima Bean Soup - cooking recipe

Ingredients
    1 lb. dried lima beans
    1/4 c. vegetable oil
    1 medium onion, chopped
    lots of celery and celery leaves
    1 c. stewed tomatoes or tomato sauce or juice
    salt and pepper to taste
Preparation
    Rinse lima beans.
    Cover with water and soak overnight.
    Drain beans and add 3 1/2 quarts boiling water.
    Add remaining ingredients.
    Simmer slowly until beans are tender and soup has thickened.
    Serve as main dish with crusty bread.
