Picante Sauce (Salsa) - cooking recipe

Ingredients
    25 to 30 medium tomatoes, scalded and peeled
    4 to 5 large onions, chopped
    1 1/2 Tbsp. minced garlic
    2 green peppers
    3 jalapeno peppers
    3 Tbsp. + 1 tsp. pickling salt
    1/2 c. sugar
    1/2 c. vinegar
Preparation
    Squeeze juice out of tomatoes.
    Save juice.
    Grind up everything and put in kettle.
    Add the salt, sugar and vinegar. Dilute 1/2 cup cornstarch in tomato juice to make a gravy.
    Add when boiling.
    Simmer 30 minutes.
    Open kettle.
    Fill jars and seal.
    Makes about 7 to 8 pints.
