Shrimp-Wild Rice Salad - cooking recipe

Ingredients
    1/2 c. uncooked long grain white rice
    1/2 c. uncooked wild rice
    1/2 c. carrot strips, parboiled
    1/2 c. frozen peas
    2 hard-boiled eggs, diced
    1/2 c. celery, diced
    2 to 3 green onions (tops and all), sliced
    1/4 c. fresh parsley, chopped
    3/4 c. mayonnaise or to taste
    1 can baby shrimp
    1/2 tsp. curry
    1/4 c. Italian dressing
Preparation
    The night before, cook rice.
    Add curry and Italian dressing. Chill overnight.
    Toss marinated rice with other ingredients just before serving.
    Line bowl with lettuce leaves.
    Add salad and garnish with cherry tomatoes.
    Serves 10 to 12.
