Chitterling Salad - cooking recipe
Ingredients

cooked chitterlings, cut up
1 c. diced celery
1/4 c. lemon juice
paprika
3/4 c. mayonnaise
salt and pepper to taste
1/4 c. diced green pepper
Preparation

Sprinkle chitterlings with lemon juice and let stand for at least 1 hour.
Add celery, green pepper, salt, pepper and mayonnaise. Serve on beds of lettuce. Sprinkle with paprika.
