Herb Roasted Chicken(Serves Four) - cooking recipe

Ingredients
    1 large roasting chicken (about 6 lb.)
    3 Tbsp. butter, softened
    1 clove garlic, minced
    3 Tbsp. grated Parmesan cheese
    1/2 tsp. sage leaves
    3/4 tsp. thyme leaves
    3/4 tsp. basil leaves
    6 Tbsp. butter, softened
    salt
Preparation
    Preheat oven to 425\u00b0.
    Wash chicken; pat dry.
    Cream together 3 tablespoons butter, garlic, Parmesan, sage, thyme and basil.
    This mixture goes under the skin, so turn chicken breast side up and make skin as loose as possible.
    Spread herb mixture underneath the skin.
    Smear butter on outside of skin.
    Put chicken breast up in roasting pan and place in oven.
    Melt remaining butter.
    Cook chicken 15 minutes, basting once.
    Reduce to 350\u00b0.
    Roast 20 minutes per pound, basting with butter every 10 minutes.
    Serve.
