Tabbouleh Salad - cooking recipe

Ingredients
    2 c. hot water
    1 c. bulgur wheat (uncooked)
    1 tsp. salt
    1 c. chopped cucumber
    1/2 c. chopped fresh parsley
    1/3 c. lemon juice
    1/4 tsp. pepper
    1 pt. cherry tomatoes, halved
Preparation
    Combine first 3 ingredients in a bowl; let stand 30 minutes. Drain well and cool.
    Add next 4 ingredients.
    Cover and chill 8 hours.
    Just before serving, stir in tomatoes.
    Yield:
    8 servings.
