New Orleans Gumbo - cooking recipe

Ingredients
    1 lb. salt pork
    1 fryer chicken, cut up
    2 lb. hot sausage, cut up
    2 lb. crab legs
    1 lb. ham, cubed
    2 to 3 tomatoes or 2 small cans whole tomatoes
    2 to 3 lb. shrimp, shelled
    2 to 3 onions, chopped
    celery, chopped
    1 lb. okra, sliced
    salt and pepper to taste
    1 1/2 tsp. file powder
Preparation
    Fry salt pork in heavy skillet until crisp.
    Add flour to slightly thicken and make a roux (gravy).
    Pour mixture into a large kettle of water.
    Add cut up chicken, ham and sausage.
    Cook until chicken is done.
    Add celery, tomatoes and onion.
    Cook for 20 minutes.
    Add okra, crab legs and shrimp.
    Cook until okra is tender.
    Add file powder.
    Serve over hot, steaming rice.
