Lo-Cal Copper Pennies - cooking recipe

Ingredients
    6 carrots, scraped and sliced
    1 small onion, sliced
    1 small green pepper, sliced
    1/2 c. tomato sauce
    1/4 c. orange juice
    2 Tbsp. cider vinegar
    1/2 tsp. Worcestershire sauce
    1/2 tsp. dry mustard
    salt and pepper to taste
    2 Tbsp. brown sugar or sugar substitute
Preparation
    Simmer carrots, onion, bell pepper, tomato sauce, orange juice, vinegar, Worcestershire sauce, dry mustard, salt, pepper and sugar in a covered saucepan for 10 to 15 minutes, or until crunchy tender.
    (Stir in sugar substitute after removing from heat.)
    Serve warm or refrigerate and serve chilled.
