Pumpkin Fritters(No Salt, No Sugar) - cooking recipe

Ingredients
    1 (16 oz.) can Libby's pumpkin
    3 eggs
    1 tsp. nutmeg
    1 tsp. cinnamon
    1/2 c. NutraSweet or sugar
    1 envelope dry yeast
    1/2 c. warm water
    3 c. flour
    1 c. raisins
    oil for frying
Preparation
    Dissolve yeast in warm water.
    In a large bowl, put pumpkin, eggs, nutmeg, cinnamon, NutraSweet or sugar and dissolved yeast. Mix with mixer at medium speed, add flour a little at a time.
    With spatula, stir in raisins.
    Cover with foil and let it raise for 30 to 45 minutes.
    Put 2-inches of oil in a narrow pot, heat the oil on medium-high.
    Drop batter by pushing with your finger from teaspoon, no more than 6 to 7 fritters at a time.
    Fry a few minutes until golden on all sides.
    Do not make fritters too big. With slotted spoon, take fritters and place on paper towel.
    Roll them in sugar or NutraSweet.
