Sweet Potato Souffle - cooking recipe
Ingredients

4 lb. sweet potatoes
1 tsp. salt
1 1/2 c. sugar
2 eggs
1/2 c. raisins
1 lemon, grated rind and juice
1/2 tsp. nutmeg
1/2 c. evaporated milk
1/2 c. chopped pecans
1 stick butter or margarine
1/2 c. shredded coconut
Preparation

Boil potatoes in salted water until tender.
Mash and whip potatoes.
Mix all ingredients and pour in greased casserole dish. Bake at 350\u00b0 for 30 minutes.
Cover top with marshmallows just before removing from oven.
Brown and serve.
